Directions
1. Mix the veggie eggs.
Crack 2 eggs into a bowl and add a splash of milk, a dash of salt, and a dash of pepper. Add about 1½ teaspoons of your favorite Spreggies... we used Kale for this version. Whisk thoroughly, adding the powder gradually if needed, until the mixture is smooth and evenly colored. For an extra-smooth mixture, you can also blend it briefly on the lowest setting.

2. Cook the egg.
Lightly grease a nonstick skillet or square omelet pan with butter and place it over low heat. Pour in the egg mixture, cover, and cook gently until the top is mostly set. Keeping the heat low helps the egg cook evenly without browning too quickly.

3. Fold and add the cheese.
Remove the pan from the heat and carefully fold the egg over itself until it’s roughly the size of your bread. Place a slice of cheese on top, cover the pan again, and let the remaining heat melt it. If needed, return the pan to low heat for a few seconds.

4. Build your sandwich.
Layer the veggie egg onto two slices of bread and add your favorite breakfast protein or toppings. We used cheddar and bacon with the kale egg, but sausage, Canadian bacon, avocado, tomato, or another cheese would all work well. Serve warm and enjoy.
