These Oatmeal Banana Cookies are a simple way to add a little extra flavor to a store-bought mix. The Banana Spruits blend right into the dough, giving the cookies a subtle banana taste without overpowering the oatmeal. Swapping out the egg for mayonnaise keeps them soft and tender, while the butter adds just the right amount of richness. With minimal prep and just a few ingredients, these cookies come together quickly and make a great treat for any occasion.

Ingredients

  • 1/2 package oatmeal cookie mix, any ~17 oz. box (standard size found at grocery stores)
  • 1 1/2 tablespoons Banana Spruits

Follow other ingredients on package -- usually requires, vegetable oil (or butter), water, and eggs.

We've adjusted the additional ingredients to using only half the package by dividing the ingredients in half, substituting the egg, and adjusting for moisture.

  • 1 1/2 tablespoon mayonnaise (originally 1 egg), using instead of 1 egg using the conversion 1 egg = 3 tablespoons mayonnaise
  • 1 tablespoon water (originally 1 tablespoon water) - leave this unchanged, the additional moisture will help rehydrate the Banana Spruits
  • 1/4 cup butter (originally 1/2 cup butter)

Directions

  1. Preheat the Oven:

    Follow the instructions on your cookie mix package. For ours, we set the oven to 350°F (177°C).

  2. Make the Cookie Dough:

    In a large bowl, combine half a package of oatmeal cookie mix, 1 1/2 tablespoons Banana Spruits, 1 1/2 tablespoons mayonnaise (as an egg substitute), 1/4 cup softened butter, and 1 tablespoon water. Stir until the mixture comes together into a dough and all dry ingredients are fully absorbed.

  3. Portion the Cookies:

    Using a 2-tablespoon cookie scoop, drop portions of dough onto a lined or greased cookie sheet. This should yield about 12 small cookies, but you can adjust the size as needed.

  4. Bake the Cookies:

    Follow the baking time on your cookie mix package. For our batch, 11 minutes was the perfect amount of time for soft, chewy cookies. Keep an eye on them—when the edges start turning golden brown, they’re ready to come out.

  5. Cool and Enjoy:

    Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. They’ll firm up slightly as they cool but will stay soft and chewy with a subtle banana flavor.
