Directions
-
Prepare the Bread:
Brush one side of each slice of bread with coconut oil, making sure it’s evenly coated for a crispy, golden crust.
-
Mix the Cheese and Carrots:
In a container with a lid, add 1/4 to 1/2 cup shredded cheddar cheese and 1/2 tablespoon Carrot Spreggies. Close the lid and shake until the cheese is evenly coated. The carrot powder will absorb some of the moisture from the cheese, creating a firmer texture. If you prefer a softer, meltier cheese, add a small drizzle of oil or water before mixing.

-
Assemble the Sandwich:
Spread the cheese-carrot mixture evenly over one unbrushed side of a slice of bread. Place the second slice on top, pressing gently to hold everything together.
-
Pre-Melt the Cheese (Optional):
For an extra smooth melt, microwave the sandwich for 30 seconds before grilling. This helps soften the cheese without over-browning the bread.
-
Grill the Sandwich:
Heat a pan over medium heat and place the sandwich in the pan. Cook for 2-3 minutes per side, pressing lightly with a spatula, until the bread is golden brown and crisp and the cheese is melted.

-
Serve and Enjoy:
Let the sandwich cool for a minute before slicing. The combination of gooey cheddar and the subtle carrot blend makes for a simple, satisfying grilled cheese with just a little extra something.
