Prepare the Bread:
Brush one side of each slice of bread with coconut oil, making sure the surface is evenly coated for a crisp, golden crust.

Make the Spinach Spread:
In a small bowl, mix 1 tablespoon Spinach Spreggies, 1 teaspoon minced garlic, 1/2 tablespoon apple cider vinegar, 1/2 tablespoon olive oil, and 1/4 teaspoon freshly ground black pepper. Stir until it forms a smooth paste. If it seems too dry, add a little more olive oil or vinegar; if it’s too thin, sprinkle in more Spinach Spreggies. The vinegar will taste strong at first but will balance out once paired with the cheese.

Assemble the Sandwich:
Spread the spinach mixture on the unbrushed side of one slice of bread and sprinkle the bacon over. On the other slice, spread 2 tablespoons of ricotta cheese, then layer white cheddar cheese slices over the top.

Pre-Melt the Cheese (Optional):
For a faster, more even melt, microwave the assembled sandwich for 30 seconds before grilling.

Heat a pan over medium heat and place the sandwich in the pan. Cook for about 2-3 minutes per side, pressing down lightly with a spatula, until the bread is golden brown and crisp and the cheese is melted.
