  • 1 lbs. very lean ground beef
  • 3 slices of bread
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup tomato sauce
  • 1/2 tablespoon Broccoli Spreggies
  • 1/2 tablespoon Carrot Spreggies
  • 1/2 tablespoons Spinach Spreggies
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Sauce
  • 3/4 cup tomato sauce
  • 2 tablespoons coconut sugar
  • 1 tablespoon mustard
  • 1 tablespoon white vinegar

  1. Preheat the Oven:

    Preheat your oven to 350°F (175°C).

  2. Prepare the Bread Crumbs:

    Tear the 3 slices of bread into small crumbs using a fork or your hands until finely shredded.

  3. Mix the Meatloaf Ingredients:

    In a large mixing bowl, combine 1 lb. very lean ground beef, bread crumbs, egg, milk, tomato sauce, Broccoli Spreggies, Carrot Spreggies, Spinach Spreggies, onion powder, salt, and pepper. Mix until just combined—avoid overmixing to keep the meatloaf tender.

  4. Form the Meatloaves:

    Divide the meat mixture into two equal portions and shape them into loaves. Place them in an oven-safe dish or a 5.75-inch x 3-inch loaf pan to help them hold their shape.

  5. Make the Sauce:

    In a medium bowl, whisk together tomato sauce, coconut sugar, mustard, and vinegar until well combined.

  6. Top with Sauce and Bake:

    Pour the sauce evenly over both loaves. Bake for 35 minutes, or until the meat is fully cooked and the sauce has thickened.
