Boxed mac & cheese is one of the easiest places to sneak in a little extra veggie goodness, especially when you have plenty of bold flavor working with you. This version adds taco seasoning and Pea Spreggies to classic cheddar mac & cheese, giving it a savory, taco-inspired twist without making dinner any more complicated. The rich cheese helps the pea flavor blend right in, while optional toppings like diced tomatoes and green onions make it feel a little more like a complete meal. Best of all, you can make it with just about any standard box of cheddar mac & cheese you already have in the pantry.

Ingredients

  • any standard boxed cheddar mac & cheese
  • milk (according to box instructions)
  • butter/margarine (according to box instructions)
  • 1 1/2 tsp of taco seasoning
  • 1 tbsp Pea Spreggies
  • diced tomato topping (optional)
  • chopped green onion topping (optional)

Directions

1. Pick your mac & cheese and seasonings.

Start with your favorite box of cheddar mac & cheese and prepare the milk and butter called for on the package. Taco seasonings can vary quite a bit in salt and spice, so give yours a taste before you start. We used about 1½ teaspoons, but you can always adjust it to your liking. If your seasoning is on the saltier side, unsalted butter is a good choice.

2. Cook the pasta.

Boil the macaroni according to the package instructions until tender, then drain it well without rinsing. Set the pasta aside while you prepare the cheese mixture.

3. Make the taco-pea cheese sauce.

Return the pot to low heat and melt the butter completely. Stir in the milk, then gradually add the cheese powder, followed by the taco seasoning and 1 tablespoon of Pea Spreggies. Stir thoroughly until everything is as smooth and evenly combined as possible, breaking up any little pockets of cheese or powder along the way.

4. Add the pasta and finish it off.

Add the cooked macaroni back into the pot and stir until every noodle is coated in the cheesy taco mixture. Serve it as-is or top it with diced tomatoes, chopped green onions, or any other taco-style toppings you like. If you want an even bigger veggie boost, you can experiment with adding a little more Pea Spreggies next time.
